Summary of Position: The Dishwasher is responsible for the efficient operation of a commercial dishwasher to wash, disinfect and re-stock daily a high volume of restaurant dishes, glasses, flatware and kitchen cookware. This position will perform other light janitorial duties and is expected to have a complete understanding of commercial sanitation and dish handling procedures. All Dishwashers will be trained to assist other kitchen employees with simple food storage and preparation.
Essential Functions:
1. Efficiently operate a commercial dishwashing machine to wash and disinfect all dishes and cookware from the restaurant and kitchen, using both hand washing and automatic dishwashing methods.
2. Return all clean and dry dishes, flatware, glassware and cookware to their proper location.
3. Maintain dish area in a clean, sanitary and organized manner.
4. Understand and perform routine troubleshooting of dishwasher; how to prime and replace dishwasher liquids and detergents; clean filters, load and unload dishwasher.
5. Alert Chef to required inventory of cleaning supplies; re-stock incoming orders as directed.
6. Perform assigned side work as posted and other general cleaning tasks as directed.
7. Handle and mix cleaning chemicals in a safe and prescribed manner. Re-fill dispensers.
8. Clean grease trap periodically.
9. Once trained and cleared by Head Chef, assist with simple food preparation: cleaning, peeling, slicing, dicing and other tasks.
10. Must pass Kitchen sanitation test.
Qualifications:
Unless a parental waiver is obtained, Dishwashers must be 18 years or older. Must be able to work in a hot and humid environment; to lift up to 50 lbs. above waist; to bend, twist, squat, or to stand for 4 hours at a time. Must be willing to work as part of a team.
